Raspberry & Vanilla Protein Mousse

Ingredients

Cream

  • 1 scoop Fiteg² Vanilla Protein Powder
  • 100 g cold milk (coconut or whole milk)
  • 2 tbsp frozen raspberries
  • 20–30 g honey or maple syrup
  • 4 ice cubes

Sauce

  • 250 g milk (cow’s or oat milk)
  • 20 g Fiteg² Vanilla Protein Powder
  • 20 g honey or maple syrup

For serving: fresh raspberries

Instructions

  1. Prepare the vanilla sauce. Using a whisk, thoroughly mix the protein powder into the cold milk until smooth and free of lumps. Let it sit for 2 minutes. Heat the mixture over low heat, stirring constantly. Do not bring to a boil — the sauce should reduce slightly. Once it thickens a little, remove from heat and allow it to cool.
  2. Prepare the raspberry mousse. In a bowl, whisk the protein powder into the cold milk until the mixture becomes smooth and fully combined. Let it rest for 2–3 minutes so the protein can fully hydrate.
  3. Blend the mousse. For this step, a powerful kitchen blender or food processor works best. Add the milk with dissolved protein powder into the blender jug, then add frozen raspberries, ice cubes and sweetener. Blend for about 3–4 minutes until you achieve a light, airy mousse texture. This dessert is best enjoyed immediately.
  4. Serve. Pour the vanilla sauce into serving glasses, top with the raspberry protein mousse, decorate with fresh raspberries and enjoy immediately.
