Chocolate Coconut Protein Bars with Pistachios

Ingredients

  • 60 g melted coconut oil
  • 50 g maple syrup
  • 100 g coconut milk (thick part)
  • 50 g Fiteg² Chocolate Protein Powder
  • 30 g unsweetened cocoa powder
  • 60 g oats
  • 50 g almond flour
  • A handful of dried cranberries
  • A pinch of salt
  • 50 g shelled green pistachios, chopped

Instructions

  1. Prepare ingredients. Blend the oats in a food processor. Melt the coconut oil. Chop the dried cranberries into smaller pieces.
  2. Mix wet ingredients. In a large bowl, combine melted coconut oil, coconut milk and maple syrup. Mix well.
  3. Add dry ingredients. Add protein powder, blended oats, cocoa powder, almond flour, salt and cranberries. Mix until you get a sticky but not runny mixture.
  4. Shape. Transfer the mixture into a rectangular tray lined with baking paper or cling film. Press down firmly and smooth the surface.
  5. Chill. Refrigerate for 2–3 hours until fully set.
  6. Finish. Remove from the tray, cut into bars and coat all sides with chopped pistachios. Serve.
