Chocolate & Coffee Protein Mousse

A rich chocolate and coffee protein mousse with a subtle citrus note — an elegant and airy dessert with a deep flavour. Recipe by Pie Galda!

Ingredients

  • 1 scoop Fiteg² Chocolate Protein Powder
  • 3 eggs
  • 200 g dark chocolate (60–70%), finely chopped
  • 30 ml espresso or very strong coffee, cooled
  • 50 ml heavy cream
  • A pinch of salt
  • 1/2 tsp orange zest

For serving

  • Cocoa powder
  • Orange zest

Instructions

  1. Melt the chocolate. Place the dark chocolate in a heatproof bowl, add the cream and espresso. Melt over a saucepan of hot water (double boiler), stirring until smooth. Let it cool slightly — it should be warm, not hot.
  2. Prepare the eggs. Separate the egg whites from the yolks. Mix the yolks into the chocolate mixture.
  3. Add the protein. Add the protein powder to the chocolate mixture and stir until smooth. If the mixture becomes too thick, add a little more cream.
  4. Whip the egg whites. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture in batches.
  5. Chill. Divide the mousse into serving glasses and refrigerate for at least 1 hour.
  6. Serve. Before serving, dust with cocoa powder and garnish with orange zest.
