Savoury Potato Protein Waffles

Ingredients

  • 150 g potatoes
  • 20 g oat flour
  • 15 g Fiteg² Egg White Protein Powder – Unflavoured & Unsweetened
  • 1 egg
  • 15 g hard cheese (optional)
  • ~50 ml milk
  • Seasonings of your choice

For serving

  • 1 tbsp Greek yogurt
  • 50 g smoked or fresh salmon

Instructions

  1. Prepare the batter. Add the potatoes, oat flour, protein powder, egg, hard cheese, milk and seasonings to a blender. Blend until smooth.
  2. Preheat the waffle iron. Heat and lightly grease the waffle iron.
  3. Cook the waffles. Add the batter to the waffle iron and cook for approximately 2 minutes, or until golden and cooked through. The exact cooking time will depend on your waffle iron.
  4. Serve. Serve the waffles with Greek yogurt and smoked or fresh salmon.

Tips

  • You can also use the batter to make pancakes, although the waffle version is recommended.
  • The waffles taste great cold too, making them easy to prepare ahead and take to work.
